  • 1 pie crust Pie Crust Store-bought or homemade, rolled thin.
For the Filling
  • 4 large Eggs
  • 1 cup Half-and-Half Can substitute with heavy cream or whole milk.
  • 1 cup Apple Smoked Gouda Shredded, can substitute with other cheeses.
  • 1 teaspoon Salt Adjust to your liking.
  • 1 teaspoon Pepper Adjust to your liking.
  • 2 tablespoons Chives Optional, for garnish.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a 24-cup mini muffin tin by lightly spraying it with cooking spray.
  2. Roll out the pie crust on a floured surface until about 1/8-inch thick. Cut out 3-inch rounds and gently place them into the muffin tin.
  3. Blind bake the crusts in the preheated oven for 8–10 minutes until they begin to firm up and lightly brown.
  4. In a mixing bowl, whisk together the eggs, half-and-half, salt, and pepper until well combined. Allow to cool slightly.
  5. Place shredded Apple Smoked Gouda in each pre-baked crust and carefully pour the egg mixture over the cheese.
  6. Bake the filled muffin tin in the 300°F (150°C) oven for 15 minutes until puffed and lightly browned.
  7. Let the quiches cool in the tin for a few minutes before removing and serve warm or at room temperature.
