- Preheat your oven to 375°F (190°C) and prepare a 24-cup mini muffin tin by lightly spraying it with cooking spray.
- Roll out the pie crust on a floured surface until about 1/8-inch thick. Cut out 3-inch rounds and gently place them into the muffin tin.
- Blind bake the crusts in the preheated oven for 8–10 minutes until they begin to firm up and lightly brown.
- In a mixing bowl, whisk together the eggs, half-and-half, salt, and pepper until well combined. Allow to cool slightly.
- Place shredded Apple Smoked Gouda in each pre-baked crust and carefully pour the egg mixture over the cheese.
- Bake the filled muffin tin in the 300°F (150°C) oven for 15 minutes until puffed and lightly browned.
- Let the quiches cool in the tin for a few minutes before removing and serve warm or at room temperature.
