  • 1/4 cup Chopped Fresh Parsley or Dried
  • 2 cloves Garlic minced
  • 1 large Egg or flaxseed egg for vegan option
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Onion Powder or grated fresh onion
  • 1 tsp Italian Seasoning or a mix of dried basil, oregano, and thyme
For the Cranberry Glaze
  • 1 cup Cranberry Sauce homemade is best
  • 1/2 cup Barbecue Sauce choose a sauce you love
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Brown Sugar optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, parsley, minced garlic, egg, salt, black pepper, onion powder, and Italian seasoning.
  3. Roll tablespoonfuls of the mixture into 1-inch meatballs and place on the baking sheet.
  4. Bake the meatballs for 15-20 minutes, until golden and cooked through (internal temperature should reach 165°F or 74°C).
  5. In a saucepan over medium heat, combine cranberry sauce, barbecue sauce, apple cider vinegar, and brown sugar. Stir for 5 minutes until heated through.
  6. Allow meatballs to cool slightly, then thread 2-3 meatballs onto each skewer.
  7. Brush the hot cranberry glaze over the meatballs or serve it on the side for dipping.
  8. Sprinkle extra chopped parsley before serving and present on a platter.
