Preparation
- Hull and halve the strawberries, then mix with sugar, lemon juice, and salt. Let sit for 1 hour.
- Strain the mixture, whisk cornstarch with reserved juices, and heat until thickened. Fold in strawberries.
- Preheat oven to 400°F (200°C).
- Roll out half of the dough, transfer to pie plate, pour in filling.
- Roll out the second half of the dough, cover the filling, pinch edges to seal and make slits for steam.
- Brush with egg wash, sprinkle sugar, and bake for 35-40 minutes until golden.
- Let pie cool completely before slicing.
