  • 2.5 pounds Fresh Strawberries hulled and halved
  • 0.75 cups Granulated Sugar plus 2 tbsp, adjust based on sweetness
  • 1 tbsp Fresh Lemon Juice
  • 0.5 tsp Kosher Salt
  • 7 tbsp Cornstarch
Crust
  • 1 recipe Double-Crust Pie Dough store-bought or homemade
  • 1 large Egg for egg wash
  • 1 tbsp Water mixed with egg

Method
 

Preparation
  1. Hull and halve the strawberries, then mix with sugar, lemon juice, and salt. Let sit for 1 hour.
  2. Strain the mixture, whisk cornstarch with reserved juices, and heat until thickened. Fold in strawberries.
  3. Preheat oven to 400°F (200°C).
  4. Roll out half of the dough, transfer to pie plate, pour in filling.
  5. Roll out the second half of the dough, cover the filling, pinch edges to seal and make slits for steam.
  6. Brush with egg wash, sprinkle sugar, and bake for 35-40 minutes until golden.
  7. Let pie cool completely before slicing.
