Step-by-Step Instructions
  1. Preheat the oven to 400°F (or prepare your grill if you prefer).
  2. Slice the baguette into ½-inch thick pieces.
  3. In a small bowl, mash together half the garlic with some butter and a pinch of salt to create a spread.
  4. Arrange the baguette slices on a baking sheet and toast for 10-12 minutes until golden brown.
  5. Combine diced tomatoes, chopped peaches, remaining minced garlic, salt, pepper, olive oil, and lemon juice in a bowl and let it marinate.
  6. In a food processor, blend the ricotta cheese until smooth and creamy.
  7. Spread a layer of whipped ricotta on each toasted baguette slice.
  8. Spoon the marinated peach and tomato mixture over the ricotta.
  9. Drizzle with balsamic glaze if desired.
  10. Serve immediately while warm and crispy.
