Preparation Steps
- Preheat your oven to 375°F (190°C).
- Lightly grease the 9x9-inch baking dish with cooking spray or olive oil.
- In a large mixing bowl, combine the cottage cheese and eggs, whisking until smooth.
- Stir in the shredded mozzarella, mini turkey pepperoni, grated parmesan, Italian seasoning, garlic powder, salt, and pepper. Mix well.
- Pour the cottage cheese mixture into the prepared baking dish and spread evenly.
- Sprinkle the reserved mozzarella and mini turkey pepperoni on top.
- Bake for 30 to 35 minutes until the edges are set and the top is golden and bubbling.
- Let the bake cool for a few minutes, then cut into squares and serve warm.
