Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease the 9x9-inch baking dish with cooking spray or olive oil.
  3. In a large mixing bowl, combine the cottage cheese and eggs, whisking until smooth.
  4. Stir in the shredded mozzarella, mini turkey pepperoni, grated parmesan, Italian seasoning, garlic powder, salt, and pepper. Mix well.
  5. Pour the cottage cheese mixture into the prepared baking dish and spread evenly.
  6. Sprinkle the reserved mozzarella and mini turkey pepperoni on top.
  7. Bake for 30 to 35 minutes until the edges are set and the top is golden and bubbling.
  8. Let the bake cool for a few minutes, then cut into squares and serve warm.
