  • 1 cup Carrots Diced small
  • 1 cup Green Peas Frozen peas work well
  • 1 small Onion Sauté until translucent
  • 2 cloves Garlic Fresh minced
For Protein and Flavor
  • 2 large Eggs Beaten before adding
  • 3 tablespoons Soy Sauce Use low-sodium soy sauce
For Garnish
  • 2 tablespoons Green Onions Finely sliced

Step‑by‑Step Instructions
  1. Preheat the Air Fryer to 375°F (190°C) for about 5 minutes.
  2. Sauté onions and garlic in vegetable oil in the air fryer basket for 5-7 minutes until translucent.
  3. Add carrots and peas, cook for another 5 minutes, shaking halfway through.
  4. Incorporate the cooked rice, breaking apart clumps and mix with the vegetables for 2-3 minutes.
  5. Beat the eggs and create a well in the rice mixture, pour in the eggs and cook for 2 minutes before mixing.
  6. Season with soy sauce, toss everything and heat for 2-3 minutes.
  7. Return the mixture to the air fryer for an additional 8-10 minutes, shaking halfway through.
  8. Garnish with green onions and serve warm.
