Step-by-Step Instructions
  1. Thinly slice the cucumbers into crisp rounds and place in a large glass jar.
  2. Layer red onion slices, tofu cubes, frozen edamame, grated carrots, and spring onions on top.
  3. In a small bowl, combine vegan cream cheese and vegan mayo until smooth. Stir in Sriracha, chili oil, and soy sauce.
  4. Spoon the creamy dressing over the layered ingredients in the jar.
