Preparation Steps
  1. Start by selecting fresh English or Persian cucumbers. Slice each cucumber in half lengthwise, then use the flat side of a meat cleaver or a rolling pin to gently smash them.
  2. Next, sprinkle a generous amount of salt over the smashed cucumbers, ensuring they are evenly coated. Let them sit in a bowl for about 5-10 minutes. Rinse well under cold water and drain.
  3. In a mixing bowl, combine finely minced garlic, soy sauce (or tamari), rice vinegar, sesame oil, sugar or honey, and chili oil to create a dressing. Whisk until fully blended.
  4. In a large bowl, toss the drained cucumbers with the prepared dressing until well coated.
  5. Sprinkle with toasted sesame seeds and finely chopped green onions. Optionally add fresh cilantro.
  6. Let the salad marinate for approximately 5-10 minutes before serving.
