Preparation Steps
- Start by selecting fresh English or Persian cucumbers. Slice each cucumber in half lengthwise, then use the flat side of a meat cleaver or a rolling pin to gently smash them.
- Next, sprinkle a generous amount of salt over the smashed cucumbers, ensuring they are evenly coated. Let them sit in a bowl for about 5-10 minutes. Rinse well under cold water and drain.
- In a mixing bowl, combine finely minced garlic, soy sauce (or tamari), rice vinegar, sesame oil, sugar or honey, and chili oil to create a dressing. Whisk until fully blended.
- In a large bowl, toss the drained cucumbers with the prepared dressing until well coated.
- Sprinkle with toasted sesame seeds and finely chopped green onions. Optionally add fresh cilantro.
- Let the salad marinate for approximately 5-10 minutes before serving.
