Salad

Method
 

Make the Dressing
  1. In a small bowl, whisk together mayonnaise, white wine vinegar, and minced garlic until smooth and creamy. Add salt and black pepper to taste.
Combine the Ingredients
  1. In a large mixing bowl, add shredded chicken breast. Pour the dressing over the chicken, and gently fold in diced cucumber, chopped red bell pepper, and diced red onion.
Chill
  1. Cover the bowl with plastic wrap or a lid, and refrigerate for at least 30 minutes.
Garnish and Serve
  1. After chilling, stir gently and serve. Optionally garnish with fresh herbs like parsley or dill.
