Make the Dressing
- In a small bowl, whisk together mayonnaise, white wine vinegar, and minced garlic until smooth and creamy. Add salt and black pepper to taste.
Combine the Ingredients
- In a large mixing bowl, add shredded chicken breast. Pour the dressing over the chicken, and gently fold in diced cucumber, chopped red bell pepper, and diced red onion.
Chill
- Cover the bowl with plastic wrap or a lid, and refrigerate for at least 30 minutes.
Garnish and Serve
- After chilling, stir gently and serve. Optionally garnish with fresh herbs like parsley or dill.
