  • 2 cups cucumbers thin-skinned varieties preferred
  • 1 medium jalapeño remove seeds for milder flavor
  • 1/2 medium red onion slice thinly
  • 1/4 cup fresh cilantro omit if not desired
For the Dressing
  • 2 tablespoons lemon juice freshly squeezed for best taste
  • 1 teaspoon salt adjust to taste

Method
 

Preparation Steps
  1. Wash cucumbers thoroughly and slice them into uniformly thin rounds, about 1/8 inch thick. Set aside to drain.
  2. Slice jalapeño in half, remove seeds, and chop into thin slices or small dice. Thinly slice red onion.
  3. Finely chop fresh cilantro after rinsing and drying it.
  4. In a large bowl, combine drained cucumbers, chopped jalapeño, sliced red onion, and cilantro.
  5. Squeeze lemon juice over the mixture and sprinkle with salt. Stir to combine.
  6. Gently toss the salad and adjust seasoning if needed. Serve immediately or chill for 30 minutes.
