  • 2 medium Cucumber Persian cucumbers are ideal
  • 1/2 Red Onion Finely chopped
  • 1/4 cup Cilantro Chopped, may substitute with parsley
For the Dressing
  • 3 tablespoons Apple Cider Vinegar Can substitute with any vinegar
  • 1 teaspoon Red Chili Flakes Adjust to taste
  • 1 tablespoon Lime Juice Optional, add more for tanginess
  • 1 tablespoon Honey Reduce if using canned pineapple

Method
 

Preparation Steps
  1. Chop the cucumber, pineapple, red onion, and cilantro into bite-sized pieces.
  2. Combine cucumber, pineapple, red onion, and half of the cilantro in a salad bowl and toss gently.
  3. Whisk together apple cider vinegar, honey, red chili flakes, remaining cilantro, and lime juice in a separate bowl.
  4. Pour the dressing over the salad mixture and toss until well coated.
  5. Cover and chill in the refrigerator for 5-10 minutes before serving.
