  • 2 cups sliced cucumbers firm, crunchy
  • 1 cup chopped red onion or green onions for milder flavor
For the Dressing
  • 1/4 cup olive oil or avocado oil
  • 2 tablespoons lemon juice or lime juice

Optional Toppings
  • 1/2 cup crumbled feta cheese
  • 1 cup cooked chickpeas
  • 1/4 cup fresh herbs basil or parsley

Method
 

Preparation Steps
  1. Wash all produce under cold running water.
  2. Dice the tomatoes into medium-sized pieces.
  3. Slice the cucumbers into thin rounds.
  4. Finely chop the red onion.
Mixing Steps
  1. In a large mixing bowl, combine the diced tomatoes, sliced cucumbers, and chopped red onion. Toss gently.
  2. Set aside while preparing the dressing.
Dressing the Salad
  1. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  2. Drizzle over the vegetable mixture and toss gently.
Marinating and Serving
  1. Allow to marinate for 15-30 minutes in the refrigerator if desired.
  2. Transfer to a serving platter, sprinkle with fresh herbs if using, and serve.
