- Drizzle olive oil over each hen, massaging it into the skin. Season with salt, pepper, paprika, minced garlic, and fresh rosemary. Tuck lemon slices into each cavity.
- Place the seasoned hens breast-side up on a roasting rack set inside a pan. Dot with butter if desired.
- Roast the hens for 45 to 55 minutes, basting halfway through. Ensure internal temperature reads 165°F (74°C) in the thigh.
