Step-by-Step Instructions

  2. Wash and halve the Roma tomatoes lengthwise and set aside.
  3. Finely chop several cloves of fresh garlic until fragrant.
  4. Mix the halved tomatoes with minced garlic, olive oil, balsamic vinegar, oregano, basil, red pepper flakes, salt, and pepper.
  5. Toss to ensure tomatoes are evenly coated.
  6. Line a baking sheet with parchment paper and spread tomatoes cut-side up.
  7. Roast the tomatoes for 45-60 minutes until softened and caramelized.
  8. Let the roasted tomatoes cool slightly.
  9. Slice the fresh mozzarella into 1/4-inch rounds.
  10. Layer the roasted tomatoes, mozzarella, and basil on a serving platter.
  11. Drizzle with olive oil and balsamic glaze, then season with salt and pepper to taste.
  12. Serve immediately to enjoy the vibrant flavors.
