  • 1 lb cooked sausage andouille or Cajun sausage for spiciness
  • 1 large red bell pepper any color bell pepper works
  • 1 large zucchini can use yellow squash instead
  • 1 cup corn kernels fresh or frozen
  • 1 tbsp olive oil avocado oil is a substitute
For the Seasoning
  • 1 tbsp chili powder adjust to taste
  • 1/4 cup fresh cilantro or parsley/green onions as alternatives
  • to taste salt taste before adding additional salt

Method
 

Step-by-Step Instructions
  1. Heat the skillet by adding 1 tablespoon of olive oil and warm for 1-2 minutes until shimmering.
  2. Cook the sliced sausage in the skillet for about 5 minutes on one side until browned, then flip and cook for an additional 3 minutes until golden.
  3. In the same skillet, sauté diced bell pepper for around 4 minutes until the edges are charred.
  4. Add sliced zucchini and sauté for about 3 minutes until slightly softened but still vibrant.
  5. Add corn kernels, sausage, and bell peppers back to the skillet. Sprinkle with chili powder and mix gently. Heat for 2-3 minutes.
  6. Remove from heat, garnish with chopped cilantro, and serve hot.
