- Heat the skillet by adding 1 tablespoon of olive oil and warm for 1-2 minutes until shimmering.
- Cook the sliced sausage in the skillet for about 5 minutes on one side until browned, then flip and cook for an additional 3 minutes until golden.
- In the same skillet, sauté diced bell pepper for around 4 minutes until the edges are charred.
- Add sliced zucchini and sauté for about 3 minutes until slightly softened but still vibrant.
- Add corn kernels, sausage, and bell peppers back to the skillet. Sprinkle with chili powder and mix gently. Heat for 2-3 minutes.
- Remove from heat, garnish with chopped cilantro, and serve hot.
