Step-by-Step Instructions for Blackstone Cowboy Stir Fry
  1. In a large skillet or griddle, heat 2 tablespoons of your preferred oil over medium heat until it shimmers, about 2 minutes.
  2. Once the oil is hot, add the sliced smoked sausage to the pan. Cook it for about 5-7 minutes, stirring occasionally until the sausage is browned and slightly crispy on the edges.
  3. While the sausage is cooking, chop the Yukon Gold potatoes, zucchini, onion, and red bell pepper into bite-sized pieces.
  4. Once the sausage is perfectly browned, toss the chopped vegetables right into the skillet. Stir everything together.
  5. Sprinkle in the garlic powder, onion powder, smoked paprika, black pepper, and salt over the mixture in the pan. Stir well to coat.
  6. Continue cooking the mixture for about 15-20 minutes, stirring occasionally, until the veggies are tender but still have a slight crunch.
  7. Once the veggies are tender and flavors developed, remove from heat and serve warm.
