  • 2 tbsp Tomato Paste
  • 1 cup Coconut Milk heavy cream can be a substitute
  • 1 cup Chicken Broth or water
  • 1 tbsp Brown Sugar or honey
  • 2 tbsp Lime Juice fresh is best

  • 1/4 cup Cilantro chopped

Step-by-Step Instructions
  1. Pat the chicken dry with paper towels, season with salt, pepper, smoked paprika, and chili flakes. Marinate briefly.
  2. Heat oil in a skillet over medium-high heat, add chicken pieces and sear for 2-3 minutes per side until golden brown. Transfer to a plate.
  3. In the same skillet, add more oil if necessary, sauté onion until softened. Add garlic and ginger, cook for an additional minute.
  4. Stir in tomato paste, cook for 1 minute. Add coconut milk and chicken broth, scraping browned bits. Bring to a simmer.
  5. Return chicken to the skillet, simmer on low for 8-10 minutes until cooked through and sauce thickens.
  6. Stir in lime juice and brown sugar, adjust seasoning, and garnish with cilantro before serving.
