  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil

For the Filling
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 3 cloves minced garlic
  • 1 tablespoon fresh ginger grated
  • 1 cup diced red bell pepper
  • 1 cup shredded carrots
  • 1/2 green onions sliced
  • 1 teaspoon kosher salt
  • 1 teaspoon ground pepper
  • 1 tablespoon sesame seeds for garnish
For Wrapping
  • 1 head Boston Bibb Lettuce
  • 1 cup steamed white rice optional

Method
 

Preparation
  1. In a medium bowl, whisk together maple syrup, coconut aminos, rice vinegar, and toasted sesame oil. If desired, add red pepper flakes and arrowroot powder. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef, breaking apart with a spatula, and sauté for about 5 minutes until browned.
  3. Stir in minced garlic and grated ginger, sautéing for another 1-2 minutes until fragrant.
  4. Add diced red bell pepper and shredded carrots to the skillet, cooking for 3-4 minutes until slightly tender.
  5. Pour the prepared sauce into the skillet, stirring to coat the ingredients. Let it simmer for 2-3 minutes until thickened.
  6. Fold in sliced green onions, then serve in Boston Bibb lettuce leaves, garnished with sesame seeds.
