Ingredients

For the Meatloaf
  • 1 pound Ground Beef the foundation of flavor and juiciness
  • 1 cup Breadcrumbs acts as a binder; swap for gluten-free if desired
  • 1 large Egg helps bind everything together; use room temperature for better mixing
  • 1 medium Onion adds moisture and sweetness; shallots can be used for a milder flavor
  • 1/2 cup BBQ Sauce imparts a smoky sweetness; feel free to use your favorite store-bought variety
For the Toppings
  • 4 pieces Brioche Buns soft and buttery, perfect for holding the hearty fillings
  • 4 slices Crispy Bacon adds a delightful crunch and richness; try turkey bacon for a lighter twist
  • 1 cup Crispy Fried Shallots wonderful for texture; store-bought versions can save time

Equipment

  • mixing bowl
  • baking sheet
  • Parchment paper
  • Skillet
  • Saucepan

Method

Preparation
  1. In a large mixing bowl, combine the ground beef, breadcrumbs, and egg, ensuring the egg is at room temperature for optimal blending.
  2. Add the chopped onion and half of the BBQ sauce, mixing gently until combined, but take care not to over-mix.
  3. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and shape the meatloaf mixture into a loaf form.
  4. Bake in the preheated oven for about 50 minutes, or until the internal temperature reaches 160°F (70°C).
  5. While the meatloaf is baking, whip up a quick barbecue sauce if you're not using a store-bought one.
  6. In a small saucepan, combine ketchup, vinegar, brown sugar, and any additional seasonings you like. Simmer over low heat for about 10 minutes.
  7. Heat a generous amount of oil in a skillet over medium heat. Add thinly sliced shallots to the hot oil, frying them until golden brown.
  8. Once the meatloaf is fully cooked, allow it to rest for about 10 minutes, then slice the meatloaf thickly.
  9. Layer each brioche bun with slices of the juicy meatloaf, drench generously with BBQ sauce, add crispy bacon, and top with fried shallots.
  10. Present your BBQ meatloaf burgers hot and fresh, ready to be devoured!
