- Preheat griddle over medium-high heat for 3-5 minutes. Add 1 tablespoon of oil once hot.
- Add sliced Yukon Gold potatoes and season with garlic powder, onion powder, smoked paprika, black pepper, and salt. Cook for 10-12 minutes until golden brown and tender.
- Push potatoes to one side, add 1 tablespoon of oil to empty space, and lay down sliced smoked sausage. Brown for about 5 minutes.
- Add chopped onion, red bell peppers, and zucchini. Stir together and cook for an additional 5-7 minutes until vegetables are crisp-tender.
- Taste and adjust the seasoning if needed. Remove from heat and serve hot, garnished with fresh parsley if desired.
