  • 2 cups Yukon Gold Potatoes sliced
  • 1 medium Zucchini sliced
  • 1 medium Onion chopped
  • 1 medium Red Bell Pepper chopped
For the Seasoning
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika
  • to taste Black Pepper
  • to taste Salt
For Cooking
  • 2 tablespoons Oil for cooking

Method
 

Step-by-Step Instructions
  1. Preheat griddle over medium-high heat for 3-5 minutes. Add 1 tablespoon of oil once hot.
  2. Add sliced Yukon Gold potatoes and season with garlic powder, onion powder, smoked paprika, black pepper, and salt. Cook for 10-12 minutes until golden brown and tender.
  3. Push potatoes to one side, add 1 tablespoon of oil to empty space, and lay down sliced smoked sausage. Brown for about 5 minutes.
  4. Add chopped onion, red bell peppers, and zucchini. Stir together and cook for an additional 5-7 minutes until vegetables are crisp-tender.
  5. Taste and adjust the seasoning if needed. Remove from heat and serve hot, garnished with fresh parsley if desired.
