Method
 

Crepe Preparation
  1. In a large mixing bowl, whisk together 1 cup all-purpose flour, 2 eggs, and 1 1/2 cups of milk until smooth and lump-free.
  2. Add 2 tablespoons of melted butter and a pinch of salt and pepper, mixing well until combined.
  3. Let the batter rest for 20-30 minutes.
  4. Heat a non-stick skillet and lightly brush with butter or oil.
  5. Pour ¼ cup of batter into the skillet, swirling to coat in a thin layer.
  6. Cook for about 40-60 seconds until edges dry, then flip and cook for another 20-30 seconds.
  7. Transfer crepe to a plate, keep warm, and repeat with remaining batter.
  8. Fill each crepe with 2-3 tablespoons of desired fillings, then fold or roll.
