Step-by-Step Instructions
  1. In a large skillet, heat over medium heat. Add the ground beef, diced onion, and bell peppers, and cook for about 8-10 minutes until browned.
  2. Add the diced potatoes to the skillet with the beef mixture. Drizzle with olive oil and season generously with garlic powder, paprika, Italian seasoning, salt, and pepper.
  3. Pour in the beef stock, stirring to mix it through the ingredients. Reduce the heat to low and cover the skillet. Let it simmer for 15-20 minutes until the potatoes are tender.
  4. Sprinkle the shredded Colby Jack cheese evenly over the hash. Cover the skillet again and let it sit for a few minutes until the cheese melts.
