- In a large skillet, melt 2 tablespoons of unsalted butter over medium heat. Add 2 cloves of minced garlic and sauté for about 1 minute, or until fragrant.
- Add 1 pound of ground beef or beef strips to the skillet, breaking it apart with a spatula. Cook for 7-10 minutes, until the beef is browned and cooked through.
- Reduce heat to low and stir in 1/4 cup of honey, 1/3 cup of BBQ sauce, and 1 teaspoon of smoked paprika along with salt and pepper to taste.
- In a separate bowl, mix together 1/4 cup of mayonnaise, 2 tablespoons of honey, 2 tablespoons of BBQ sauce, and a pinch of smoked paprika. Whisk until smooth.
- Warm 6 soft taco tortillas in a skillet for about 30 seconds per side. Spoon beef mixture onto each tortilla and drizzle with taco sauce.
- Sprinkle 1 cup of shredded cheddar cheese over the beef filling in each tortilla and garnish with chopped cilantro if desired. Serve immediately.
