- Preheat your grill to medium-high heat (375-400°F). Clean the grates and brush with oil.
- Combine olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper in a bowl. Rub the spice mix onto the chicken thighs.
- Place the chicken thighs skin side down on the grate. Grill for 6-8 minutes without moving, then flip and grill the other side for another 6-8 minutes.
- Brush barbecue sauce on both sides of the chicken. Grill for an additional 6-10 minutes, basting every 2-3 minutes until caramelized and cooked through to 165°F.
- Remove chicken from the grill and let it rest for 5 minutes before serving. Garnish with chopped parsley and serve with extra BBQ sauce.
