Preparation and Grilling
- Cut the chicken breast into uniform 1 to 1½-inch cubes and chop the bell peppers and red onion.
- In a small bowl, combine the ground paprika, black pepper, and salt for dry seasoning mix.
- Whisk together mayonnaise, canola or olive oil, minced garlic, honey, and hot sauce in a separate bowl for marinade.
- Add cubed chicken and chopped vegetables to the marinade bowl, sprinkle with dry seasoning, and stir until evenly coated. Marinate for at least 30 minutes.
- Thread the marinated chicken and vegetables onto skewers, alternating between chicken and vegetables.
- Preheat the grill to medium heat, around 350°F to 400°F.
- Grill the kabobs for about 12 to 15 minutes, turning occasionally until chicken reaches an internal temperature of 165°F.
- Remove kabobs from the grill and let them rest for a few minutes before serving.
