For the Kebab
  • 1 pound Chicken Breast Boneless and skinless
  • 1 medium Red Bell Pepper
  • 1 medium Orange Bell Pepper
  • 1 medium Green Bell Pepper
  • 1 medium Yellow Bell Pepper
  • 1 medium Red Onion
  • 8 ounces White Mushrooms Sliced
For the Marinade
  • 3 cloves Garlic Minced
  • 3 Tbsp Canola or Olive Oil
  • 2 Tbsp Honey
  • 2 Tbsp Mayonnaise
  • 1.5 tsp Ground Paprika
  • 0.5 tsp Ground Black Pepper
  • 0.5 tsp Salt Kosher recommended
  • 1 tsp Hot Sauce Frank's or Sriracha

Method
 

Preparation and Grilling
  1. Cut the chicken breast into uniform 1 to 1½-inch cubes and chop the bell peppers and red onion.
  2. In a small bowl, combine the ground paprika, black pepper, and salt for dry seasoning mix.
  3. Whisk together mayonnaise, canola or olive oil, minced garlic, honey, and hot sauce in a separate bowl for marinade.
  4. Add cubed chicken and chopped vegetables to the marinade bowl, sprinkle with dry seasoning, and stir until evenly coated. Marinate for at least 30 minutes.
  5. Thread the marinated chicken and vegetables onto skewers, alternating between chicken and vegetables.
  6. Preheat the grill to medium heat, around 350°F to 400°F.
  7. Grill the kabobs for about 12 to 15 minutes, turning occasionally until chicken reaches an internal temperature of 165°F.
  8. Remove kabobs from the grill and let them rest for a few minutes before serving.
