Method
 

Step-by-Step Instructions for Hawaiian Beef Skewers
  1. Begin by cutting your tri-tip steak into 1 ½" cubes. Place the cubes in a large resealable storage bag.
  2. In a separate bowl, whisk together minced garlic, soy sauce, brown sugar, rice vinegar, and sesame oil until well combined. Set aside one-third of this for later use.
  3. Pour the marinade over the beef cubes inside the bag, seal it and toss gently. Let it marinate in the refrigerator for 4 hours or overnight.
  4. While the beef marinates, cut pineapple, red bell pepper, and onion into 1 ½" pieces.
  5. Thread the marinated beef, pineapple chunks, bell pepper pieces, and onion slices onto your skewers, alternating each ingredient.
  6. In a small bowl, mix the reserved marinade with ketchup and honey to create your basting sauce.
  7. Preheat your grill to medium heat, around 350°F. Soak wooden skewers in water for at least 30 minutes before grilling.
  8. Place the assembled skewers on the grill and cook for approximately 15 minutes, turning every 2-3 minutes and basting during the last few turns.
  9. Use a meat thermometer to check for doneness; aim for 145-150°F for medium.
  10. Once done, remove skewers from the grill and let them rest. Serve sprinkled with sesame seeds and chopped green onions.
