Ingredients
  

For the Sauce
  • 2 tablespoons Mayonnaise substitute with Greek yogurt for a lighter option
  • 2 tablespoons Prepared Pesto can be replaced with fresh herbs
For the Bread
  • 1 piece Baguette/Ciabatta/Focaccia opt for whole grain varieties for added fiber
For the Filling
  • 4 slices Sliced Cooked Chicken use leftover roast chicken or turkey for convenience
  • 3 slices Sliced Prosciutto turkey bacon or thinly sliced ham can be used as a substitute
  • 1 cup Roasted Red Peppers fresh grilled peppers can also be used
  • 4 slices Sliced Low-Moisture Mozzarella fresh mozzarella can be swapped for a stronger flavor
  • 1 handful Arugula/Spinach/Basil Leaves any leafy green works, such as lettuce or mixed greens

Method
 

Preparation Steps
  1. In a small bowl, combine mayonnaise and prepared pesto, mixing them until smooth and well incorporated.
  2. Take your chosen bread and slice it in half horizontally. Spread a generous layer of the pesto-mayonnaise mixture on the bottom half.
  3. Layer sliced cooked chicken evenly on top of the sauce, followed by adding slices of prosciutto.
  4. Place roasted red peppers atop the prosciutto, then lay down slices of low-moisture mozzarella on top.
  5. Add a handful of arugula, spinach, or basil leaves on top of the mozzarella. Season with a pinch of salt and pepper.
  6. Wrap the entire sandwich in aluminum foil and toast in a preheated oven to 375°F (190°C) for about 5-7 minutes.
  7. Once toasted, unwrap and slice the sandwich in half to serve.
