- Line a baking sheet with parchment paper. Carefully open each Medjool date and remove the pit, then lay the dates flat on the lined baking sheet.
- Gently press down on each date to flatten them to about half an inch thick.
- Spread a thin, even layer of peanut butter over each smashed date.
- Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, then drizzle over the peanut butter-covered dates.
- Place the baking sheet in the fridge or freezer to allow the chocolate to set for about 30 minutes.
- Once the chocolate has hardened, sprinkle flaky salt over each date, then serve and enjoy!
