Step-by-Step Instructions
  1. In a medium bowl, whisk together hot sauce and melted butter until thoroughly combined. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper. Sauté chicken for 5-7 minutes until golden brown and cooked through.
  3. Reduce heat to low and pour buffalo sauce over chicken. Toss to coat and let simmer for 3-5 minutes.
  4. Divide cooked rice among serving bowls.
  5. Spoon buffalo chicken over the rice in each bowl.
  6. Top each bowl with shredded lettuce and halved cherry tomatoes.
  7. Sprinkle shredded cheese over each bowl and drizzle with ranch or blue cheese dressing.
