Cooking Steps
- Bring a large pot of salted water to a rolling boil. Add the fusilli pasta and cook for 8 to 10 minutes, then reserve ½ cup of pasta water before draining.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and cook for 1 to 2 minutes per side until pink and opaque. Transfer shrimp to a plate.
- In the same skillet, add the sliced andouille sausage and cook for about 3 to 4 minutes until browned. Remove and set aside with the shrimp.
- Add the chopped red and green bell peppers and onion to the skillet. Cook for approximately 5 minutes. Add minced garlic and stir for another minute.
- Pour the Alfredo sauce into the skillet, add reserved pasta water, Cajun seasoning, and smoked paprika. Simmer for 3 to 4 minutes until thickened.
- Return the shrimp and sausage to the skillet. Add the fusilli and toss gently to coat. Adjust sauce consistency with more pasta water if needed.
