  • 2 cups Corn Use fresh or thawed frozen corn.
  • 1 whole Jalapeño Remove seeds for milder spice.
  • 1/4 cup Cilantro Parsley works for a milder alternative.
  • 1/4 cup Green Onions Red onion can be used for a bolder taste.
For the Dressing
  • 1/2 cup Mayonnaise Greek yogurt can be used for a healthier option.
  • 2 tablespoons Lime Juice Fresh lime juice is preferred.
  • 1 tablespoon Sugar Adjust according to taste.
  • 1 teaspoon Garlic Powder Fresh minced garlic can be an alternative.
  • to taste Salt and Pepper Enhance all the flavors.

Method
 

Mixing Instructions
  1. In a large mixing bowl, add the cole slaw mix, sweet corn, minced jalapeño, fresh cilantro, and chopped green onions. Toss gently until well combined.
  2. In a small bowl, whisk together the mayonnaise, lime juice, sugar, garlic powder, salt, and pepper until smooth.
  3. Drizzle the dressing over the slaw mixture and gently fold until all ingredients are coated.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Remove from the refrigerator, toss lightly, and serve chilled.
