  • 2 cups Sushi Rice Rinse well before cooking.
  • 2 cups Water Follow rice package instructions for measurement.
  • 1/4 cup Rice Vinegar
  • 2 tablespoons Sugar
  • 1 teaspoon Salt
For the Salmon Mixture
  • 1 lb Fresh Salmon Fillet Diced, can swap with crab or shrimp.
  • 1/2 cup Mayonnaise
  • 3 tablespoons Sriracha Sauce Adjust based on heat preference.
  • 1 tablespoon Sesame Oil
  • 3 stalks Green Onions Chopped.
For Serving
  • 4 sheets Nori Cut into strips.
  • 1/4 cup Tobiko Optional.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Rinse sushi rice under cold water until the water runs clear, then cook it with water in a medium saucepan until tender.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved, then fold into the cooked rice.
  4. In a large bowl, combine fresh salmon, mayonnaise, sriracha, sesame oil, and green onions until well mixed.
  5. Spread the seasoned rice in a greased baking dish, then layer the salmon mixture evenly on top.
  6. Bake in the preheated oven for 25-30 minutes until golden brown and cooked through.
  7. Remove from oven, cool briefly, then garnish with green onions, nori strips, and optional tobiko before serving.
