- Preheat your oven to 350°F (175°C). Prepare a 9x13-inch baking dish by lining it with parchment paper or greasing it.
- In a medium bowl, mix together all-purpose flour, brown sugar, old-fashioned oats, and melted unsalted butter until it resembles coarse crumbs. Press evenly into the bottom of the baking dish. Bake for 15 minutes or until golden brown.
- In a saucepan over medium heat, combine chopped fresh rhubarb, granulated sugar, cornstarch, and a splash of water. Stir continuously until thickened and glossy, about 5-7 minutes. Remove from heat and stir in vanilla extract.
- Pour the warm rhubarb mixture over the baked crust and spread evenly with a spatula.
