  • 2 Eggs beaten
  • 1 3/4 cups Bread torn into small pieces
  • 1/2 cup Cheddar Cheese grated
  • 1/4 cup Onion chopped
  • 2 tbsp Parsley Flakes
  • 1 1/2 tsp Salt total, includes 1 1/4 tsp in filling and 1/4 tsp for sprinkling
For Assembly
  • Butter a few dots for richness
  • Parmesan Cheese grated for topping

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare the zucchinis.
  2. Boil the zucchinis in salted water for 4-5 minutes until tender.
  3. Hollow out the cooked zucchinis and reserve the flesh.
  4. Mix the reserved zucchini flesh with remaining filling ingredients.
  5. Fill the boats with the mixture, dot with butter, and sprinkle with Parmesan.
  6. Bake in the oven for 35-45 minutes until golden brown.
