Make the Marinade
- In a mixing bowl, whisk together soy sauce, honey, peanut butter, rice vinegar, fresh ginger, minced garlic, ground cumin, ground coriander, red pepper flakes, sesame oil, and lime juice until smooth.
Marinate the Chicken
- Place the chicken thighs in a zip-top bag, pour the marinade over, seal it, and refrigerate for at least 2 hours.
Prepare for Cooking
- Preheat the grill to medium-high heat or the oven to 400°F (200°C).
Cook the Chicken
- For grilling, cook chicken thighs for 6-8 minutes on each side until they reach 165°F. For roasting, place on a baking sheet and roast for 35-40 minutes.
