Method
 

Step-by-Step Instructions
  1. Whisk the egg yolks and erythritol until light and fluffy, about 2 minutes.
  2. Heat almond milk, heavy cream, cinnamon, and nutmeg over medium heat for about 5 minutes until simmering.
  3. Slowly pour the hot milk mixture into the egg yolk mixture while whisking continuously.
  4. Return mixture to saucepan and cook over medium heat, stirring until thickened, about 5-7 minutes.
  5. Strain eggnog through a sieve into a bowl, cool, cover and chill for at least 30 minutes.
  6. Stir in vanilla extract and serve, optionally topping with whipped cream or spices.
