Method
 

Step-by-Step Instructions
  1. Begin by lightly spraying the slow cooker with nonstick spray.
  2. In a large skillet over medium heat, add the ground beef, diced onions, and minced garlic. Cook until the beef is browned, about 7-10 minutes.
  3. With the beef mixture in the slow cooker, add the dark red kidney beans, petite diced tomatoes, frozen corn, kosher salt, black pepper, and chipotle powder. Stir until fully combined.
  4. Slice the Yukon Gold potatoes thinly, and layer them evenly over the meat and bean mixture in the slow cooker.
  5. Cover the slow cooker and set it on high for 5 hours or low for 7 hours.
  6. About 15 minutes before serving, uncover the slow cooker and sprinkle the shredded cheese over the top.
  7. Once everything is cooked and the cheese has melted, serve your delicious casserole!
