Preparation Steps
- Preheat your oven to 180°C (160°C fan-forced) and grease a 20 cm round cake tin with parchment paper.
- Combine the plain flour, Dutch cocoa powder, caster sugar, brown sugar, baking powder, bicarb soda, and salt in a large mixing bowl.
- In a separate jug, whisk together the eggs, vanilla extract, neutral oil, and milk until smooth.
- Pour the wet mixture into the bowl with the dry ingredients and stir until just smooth. Add the boiling water and mix until fully combined.
- Pour the batter into the prepared cake tin and bake for 45-50 minutes, or until a skewer comes out clean.
- Allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
- Prepare the icing by mixing the icing sugar and cocoa with melted butter, milk, and vanilla extract until smooth.
