Ingredients
  

For the Cake
  • 2 cups Plain Flour can be substituted with gluten-free flour
  • 3/4 cup Dutch Cocoa Powder avoid using standard cocoa
  • 1 cup Caster Sugar can swap with brown sugar
  • 1/2 cup Brown Sugar can replace with caster sugar if needed
  • 1 tbsp Baking Powder
  • 1 tsp Bicarb Soda
  • 1 tsp Salt must not be omitted
  • 2 large Eggs can replace with flaxseed mixture or silken tofu
  • 1 tsp Vanilla Extract optional but recommended
  • 1/2 cup Neutral Oil such as vegetable or canola
  • 1 cup Milk can substitute with light milk or water
  • 1 cup Boiling Water can be replaced with hot coffee
For the Icing
  • 2 cups Icing Sugar Mixture can mix with cocoa for variation
  • 1/2 cup Butter can use dairy-free spread
  • 2 tbsp Additional Milk add as needed for consistency
  • 1 tsp Vanilla Extract optional for icing

Method
 

Preparation Steps
  1. Preheat your oven to 180°C (160°C fan-forced) and grease a 20 cm round cake tin with parchment paper.
  2. Combine the plain flour, Dutch cocoa powder, caster sugar, brown sugar, baking powder, bicarb soda, and salt in a large mixing bowl.
  3. In a separate jug, whisk together the eggs, vanilla extract, neutral oil, and milk until smooth.
  4. Pour the wet mixture into the bowl with the dry ingredients and stir until just smooth. Add the boiling water and mix until fully combined.
  5. Pour the batter into the prepared cake tin and bake for 45-50 minutes, or until a skewer comes out clean.
  6. Allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
  7. Prepare the icing by mixing the icing sugar and cocoa with melted butter, milk, and vanilla extract until smooth.
  8. Spread the icing generously over the cooled cake and decorate as desired.
