  1. Begin by slicing the red and green bell peppers into thin strips, then set them aside. Mince the garlic and finely chop the ginger. Ensure your shrimp are peeled, deveined, and thoroughly dried.
  2. In a mixing bowl, whisk together the rice vinegar, ketchup, honey, and soy sauce. Gradually stir in the dissolved cornstarch mixture until the sauce is smooth.
  3. Heat vegetable oil in a large skillet over medium-high heat. Carefully add the shrimp, cooking for 2-3 minutes until they turn pink and opaque. Remove from the skillet.
