Preparation Steps
- Preheat your oven to 400°F (200°C). Gather your ingredients to keep the cooking process smooth.
- Cook bacon in a large skillet over medium heat until crispy, about 8-10 minutes, and transfer to a paper towel-lined plate.
- In the same skillet, leave 1 tablespoon of bacon grease, add potatoes and taco seasoning, and sauté for 10-12 minutes until golden brown.
- Reduce heat to low, pour in eggs, and stir gently until eggs are just combined with potatoes, cooking for another 2-3 minutes.
- Warm soft corn tortillas slightly if needed, then spoon the potato and egg mixture into each tortilla, topping with crumbled bacon and cheese.
- Arrange tacos in a baking dish and bake in the preheated oven for 12-15 minutes until tortillas are crisp and cheese is bubbly.
- Carefully remove from oven, let cool for a couple of minutes, and serve with toppings of choice.
