  • 2 tbsp Soy Sauce Use tamari as a gluten-free alternative.

Method
 

Cooking Instructions
  1. Prepare the Marinade: In a medium bowl, whisk together the olive oil, ketchup, apple cider vinegar, honey, and soy sauce until smooth. Add the minced garlic, smoked paprika, onion powder, black pepper, and optional chili flakes. Mix well.
  2. Marinate Chicken: Pat chicken thighs dry and place them into the marinade, ensuring each piece is well-coated. Cover and let it marinate for at least 30 minutes in the refrigerator.
  3. Assemble Skewers: Soak wooden skewers in water for about 30 minutes to prevent burning. Alternate threading marinated chicken, bell pepper chunks, and onion slices onto the skewers.
  4. Preheat Grill: Heat your grill to medium-high, aiming for around 400°F (200°C). Lightly coat the grill grates with an oiled paper towel.
  5. Grill Skewers: Place the assembled skewers on the grill without moving them, cooking for 5-7 minutes. Flip and grill for another 5-7 minutes. Baste with leftover marinade in the last 2-3 minutes.
  6. Check for Doneness: Ensure skewers reach an internal temperature of 165°F (74°C). Let them rest for 3-5 minutes before serving.
