  • 2 tablespoons apple cider vinegar
  • 1/4 cup pineapple juice reserved from canned pineapple
  • 1/2 teaspoon kosher salt

For the Coleslaw Mix
  • 4 cups coleslaw mix or shredded cabbage mix of red and white cabbage adds color
  • 1 cup pineapple tidbits fresh or canned
  • 1/2 cup chopped macadamia nuts choose roasted or raw

Method
 

Preparation Steps
  1. In a medium bowl, whisk together the Greek yogurt, Dijon mustard, apple cider vinegar, and pineapple juice until smooth.
  2. Add kosher salt and black pepper to taste, mixing well.
  3. In a large mixing bowl, combine coleslaw mix, pineapple tidbits, and chopped macadamia nuts. Toss gently to mix.
  4. Pour the dressing over the slaw mixture and toss until everything is coated.
  5. Transfer to a serving bowl and chill for at least 30 minutes before serving.
  6. Serve chilled as a side to grilled meats at gatherings.
