Ingredients
  

For the Chicken Marinade
  • 4 pieces Boneless Skinless Chicken Thighs Use thighs for extra flavor.
  • 1/4 cup Olive Oil Avocado oil can be substituted.
  • 1 tablespoon Lemon Juice Freshly squeezed preferred.
  • 2 teaspoons Garlic Powder Can use fresh garlic, 1 clove per teaspoon.
  • 1 teaspoon Smoked Paprika Regular paprika is a substitute.
  • 1/2 teaspoon Salt Adjust to taste.
  • 1/4 teaspoon Pepper Adjust to taste.
For the Sandwich Assembly
  • 4 pieces Sandwich Buns Brioche or ciabatta recommended.
  • 4 slices Cheese (Cheddar or Provolone) Swiss or pepper jack are alternatives.
  • 1 cup Lettuce Arugula can be substituted.
  • 1 cup Tomatoes Sliced.
  • 1 cup Red Onions Sliced.
  • 1/2 cup Mayonnaise Aioli or mustard for a kick.

Method
 

Preparation Steps
  1. In a mixing bowl, whisk together ¼ cup of olive oil, the juice of one lemon, 2 teaspoons of garlic powder, 1 teaspoon of smoked paprika, ½ teaspoon of salt, and ¼ teaspoon of pepper until well combined.
  2. Coat the chicken cutlets evenly with the marinade, cover, and refrigerate for at least 20 minutes.
  3. Preheat your grill or grill pan over medium-high heat for about 5-7 minutes.
  4. Add the marinated chicken cutlets and cook for 3-4 minutes on each side until golden brown and the internal temperature reaches 165°F.
  5. Toast your sandwich buns cut-side down on the grill for 1-2 minutes.
  6. Spread mayonnaise on the bottom half of each toasted bun, layer with lettuce, grilled chicken, cheese, tomatoes, and onions, then top with the other bun.
  7. Serve warm and enjoy!
