  4. Halve 1 cup of cherry tomatoes.
  5. Thinly slice 1/2 cup of red onion and soak in cold water for 5 minutes.
  6. Add the drained onions and top with 1/2 cup of crumbled feta.
  7. In a small bowl, whisk together dressing ingredients: 1/4 cup olive oil, 2 tablespoons lemon juice, 1 teaspoon salt, and 1/2 teaspoon pepper.
