Preparation Steps
- In a large mixing bowl, combine the shredded chicken, cream cheese, diced sausage (if using), green onions, cheddar cheese, hot sauce, and Cajun seasoning. Use a fork to mix until well-blended and creamy.
- Place an egg roll wrapper on a clean surface in a diamond shape. Add about 2 tablespoons of the prepared filling to the bottom corner of the wrapper. Fold the corner over the filling, then fold in the sides before rolling it up tightly to seal.
- In a deep skillet or fryer, heat about 2 inches of vegetable oil to 350°F (175°C). Let the oil heat for about 5-10 minutes.
- Carefully place the assembled egg rolls into the hot oil in batches. Fry for about 3-4 minutes or until golden brown and crispy, turning occasionally.
- Plate your hot, crispy Voodoo Egg Rolls and serve immediately with your favorite dipping sauces.
