Preparation Steps
  1. In a large mixing bowl, combine the shredded chicken, cream cheese, diced sausage (if using), green onions, cheddar cheese, hot sauce, and Cajun seasoning. Use a fork to mix until well-blended and creamy.
  2. Place an egg roll wrapper on a clean surface in a diamond shape. Add about 2 tablespoons of the prepared filling to the bottom corner of the wrapper. Fold the corner over the filling, then fold in the sides before rolling it up tightly to seal.
  3. In a deep skillet or fryer, heat about 2 inches of vegetable oil to 350°F (175°C). Let the oil heat for about 5-10 minutes.
  4. Carefully place the assembled egg rolls into the hot oil in batches. Fry for about 3-4 minutes or until golden brown and crispy, turning occasionally.
  5. Plate your hot, crispy Voodoo Egg Rolls and serve immediately with your favorite dipping sauces.
