For the Casserole
  • 1 can Black Beans or kidney/pinto beans
  • 1 can Diced Tomatoes with Green Chiles or plain diced tomatoes
  • 1 cup Sour Cream can use Greek yogurt for a healthier option
  • 6 oz Fritos Corn Chips can substitute with Doritos or tortilla chips
  • 2 cups Mexican-Style Shredded Cheese or Monterey Jack/Cheddar
For Toppings
  • 1/4 cup Green Onions chopped
  • 1 cup Guacamole
  • 1/2 cup Jalapenos sliced, adjust to taste
  • 1 cup Salsa your favorite variety

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a 13x9-inch baking dish with cooking spray or olive oil.
  2. In a large skillet over medium heat, add the ground beef and diced onion. Cook until browned and onions are soft, about 7-10 minutes.
  3. Stir in the taco seasoning and water, bringing the mixture to a gentle boil for 2-3 minutes.
  4. Reduce heat and mix in black beans, diced tomatoes with green chiles, and sour cream. Cook for an additional 5 minutes.
  5. Layer half of the Fritos corn chips on the bottom of the baking dish.
  6. Sprinkle 1 cup of cheese over the Fritos, then evenly distribute the meat mixture, and top with remaining cheese.
  7. Cover with aluminum foil and bake for 15 minutes. Remove foil and bake for another 5 minutes until cheese is melted and golden.
  8. Let the casserole cool for a few minutes, then serve hot with toppings like green onions, guacamole, jalapenos, and salsa.
