  • 1.5 pounds Boneless Skinless Chicken Breasts can substitute with thighs

Step-by-Step Instructions
  1. Begin by cutting the boneless skinless chicken breasts into 1-inch bite-sized pieces.
  2. In a large mixing bowl, combine fresh lemon juice, lemon zest, olive oil, minced garlic, dried oregano, dried parsley, paprika, salt, and black pepper. Whisk together.
  3. Add the chicken pieces to the marinade, coating thoroughly. Cover and refrigerate for at least 30 minutes.
  4. Preheat the grill to medium-high heat, aiming for around 375°F (190°C). Soak wooden skewers in water for about 15 minutes.
  5. Thread the marinated chicken pieces onto skewers. Leave space between pieces for even cooking.
  6. Grill the skewers for about 4 minutes on each side until golden brown and cooked through, reaching 165°F (75°C).
  7. Remove from grill and let rest for a few minutes before serving with tzatziki sauce and Greek salad.
