Step-by-Step Instructions
  1. Boil a large pot of salted water, add tortellini, and cook for 3-5 minutes until they float. Drain and rinse under cold water.
  2. In a mixing bowl, combine cherry tomatoes, cucumber, olives, and red onion. Pat cucumber dry.
  3. Add cooled tortellini to the vegetable bowl, and gently fold in feta cheese just before serving.
  4. Whisk together olive oil, red wine vinegar, garlic, oregano, salt, and pepper in another bowl for the dressing.
  5. Pour the dressing over the salad mixture and stir gently to combine.
