  • 1 head Romaine Lettuce Chopped into bite-sized pieces
  • 1 medium Cucumber Sliced thinly
  • 1 cup Cherry Tomatoes Halved
  • 1 medium Avocado Sliced into cubes
  • 1/4 cup Sunflower Seeds
For the Dressing
  • 1/4 cup Fresh Herbs Such as parsley, chives, or tarragon
  • 1 clove Garlic Minced
  • 1/2 cup Greek Yogurt Can be replaced with avocado for a dairy-free option
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 2 tablespoons Olive Oil Extra virgin preferred

Method
 

Preparation
  1. Wash and dry the romaine lettuce, cucumber, cherry tomatoes, and avocado. Chop the romaine into bite-sized pieces and slice the cucumber thinly.
  2. Halve the cherry tomatoes and scoop the avocado, slicing it into cubes. Place all the veggies into a large mixing bowl.
Combine Ingredients
  1. Add the sunflower seeds to the bowl and gently toss the salad ingredients together.
Make the Dressing
  1. In a separate bowl, combine fresh herbs, minced garlic, Greek yogurt, lemon juice, and olive oil. Whisk until smooth.
Dress the Salad
  1. Drizzle the dressing over the salad and toss gently to coat.
Serve
  1. Serve immediately, garnishing with extra sunflower seeds or herb sprigs if desired.
