  • 1 large Red Bell Pepper Can substitute with yellow or orange peppers.
  • 1 medium Jalapeño Pepper Remove seeds for less spice if preferred.
  • 1 small Red Onion Can substitute with green onions or omit.
  • 1/4 cup Cilantro Can be replaced with parsley if desired.
For the Dressing
  • 1/2 cup Cotija Cheese Feta cheese can be used as an alternative.
  • 1/3 cup Mayonnaise Greek yogurt can be used for a lighter option.
  • 1 teaspoon Chili Powder Adjust to taste or replace with smoked paprika.
  • 1 teaspoon Smoked Paprika Regular paprika can be used for less smokiness.
  • 1/2 teaspoon Salt Adjust according to taste.
  • 2 tablespoons Lime Juice Fresh lime juice adds brightness.

Method
 

Preparation
  1. Preheat the grill to medium-high heat, around 400°F (200°C).
  2. Grill corn on the cob for about 6 minutes, turning every 2 minutes for even charring.
  3. Remove corn from the grill and allow to cool before slicing the kernels off.
  4. Dice the red bell pepper, slice the jalapeño, mince the garlic, and chop the red onion.
  5. In a separate bowl, whisk together mayonnaise, chili powder, smoked paprika, salt, and lime juice.
  6. Fold the dressing into the corn and vegetable mixture until well combined.
  7. Cover and refrigerate for at least 30 minutes before serving.
