Preparation
- Preheat the grill to medium-high heat, around 400°F (200°C).
- Grill corn on the cob for about 6 minutes, turning every 2 minutes for even charring.
- Remove corn from the grill and allow to cool before slicing the kernels off.
- Dice the red bell pepper, slice the jalapeño, mince the garlic, and chop the red onion.
- In a separate bowl, whisk together mayonnaise, chili powder, smoked paprika, salt, and lime juice.
- Fold the dressing into the corn and vegetable mixture until well combined.
- Cover and refrigerate for at least 30 minutes before serving.
